This past weekend, I hosted a baby shower with a few gals for my best friend. It was amazing and so much fun! I made all the decorations but the other gals made the snacks and HOLY COW have you ever had Fruit Pizza? It is delicious and really, super easy as well as interactive! We got so many compliments that I have to share the “recipe” with you. I know, I know, I know. I don’t write a recipe column but really, you don’t have to cook anything and it’s so creative, it’s almost a craft. Plus BONUS – it would be a great activity to have at a kids’ party!
For this crafty and delicious treat you will need some sugar cookies, frosting, and fruit, all sliced up. We used strawberries, grapes, kiwis, peaches, raspberries, blueberries, and pineapple. You can use any frosting you want – we used a cream cheese based frosting (recipe at the bottom). And the sugar cookies… we tried all sorts of recipes but none of them were soft enough. So our wonderful and fearless leader called in reinforcements… you know who makes some dang good sugar cookies? Casey’s -the gas station. I know, I could barely believe it myself when she told me. I highly recommend calling them right now and ordering at least a dozen – they are soft and chewy yet sturdy enough to hold the pound of frosting and fruit you are going to pile on them in a few minutes.
To make this treat, all you do it spread some frosting on your cookie and then pile on your fruit. No rhyme or reason, you just put on as much or as little as you like. If you are making these for a party, it’s really a super easy activity and it’s GORGEOUS and adds a bunch of color to any room. Make sure you set up the table so that it’s attractive and inviting to all of your guests. We used brown paper as a tablecloth and then had glass bowls full of the fruit spread across the table. Don’t mix your fruits or it messes up the personalization of the treat. Use cake stands to lift some of your bowls off the table to give the layout some height to add interest. Add a few small vases of colorful flowers to really make the fruit pop. I am telling you – follow all these directions and you will not be disappointed.
Now for the frosting – SUPER EASY! ( not as easy as just buying cookies from Casey’s, but close.) Combine 16 Oz Cream cheese, 1 container of Cool Whip, 3 tsp of almond extract (or whichever kind you prefer) and ½ to 1 cup of powdered sugar. Start slow with the sugar and add it to taste so you don’t over do the sweetness. Use either a hand or stand mixer to really get the frosting smooth and creamy.
That’s it! You now have a delicious treat activity to serve at your next party.
